WAFFLES BY CHERYL

Hi Patty--I must be really old -51 now :( Do I just email you recipes or is there a way to enter it in your blog page?
Waffles--
2 cups whole wheat flour
1/2 cup powdered milk
1 tablespoon baking powder
1/2 teaspoon sea salt
Mix all the dry ingredients together and then blend together and add 2 organic eggs, 1/2 cup expeller pressed oil, 1 tablespon organic agave nectar and enough water to make two cups when mixed with the rest of the wet ingredients.
Mix all ingedients together and pour approx 1/3 cup into each waffle mold.
Any ingredients you can get organic will always be better. I use this recipe like bread also, I'll put organic almond butter (no sugar or oil added or anything else, just almonds & salt) on a waffle & maybe some agave nectar-- like a peanut butter & honey sandwich-- only really good for you. In the morning I'll eat the waffles with organic butter on them & maybe some all fruit jam but they're great plain.
Sometimes people get caught up only mixing vegetables with vegetables & only fruit with fruit, some of my best salads are a mixture of both, the key is a good variety of both & cut into very small pieces add some nuts and raisins too. It doesn't even need dressing the fruit sweetens it. YUMMY!
It takes about 1 or 2 weeks to get off of sugar before you don't miss it anymore. I never thought I'd say that but it's true. Things I didn't use to care about eating (all the good stuff) I now crave, I don't overeat them, but they truly satisfy me. Also you can buy xylitol in powdered form at whole foods. Use it in place of sugar if you really want something sweet. (xylitol is from the bark of a tree, I believe, so it's all natural & is actually good for you-- but be careful not to get carried away with it as it can cause the runs!)

Beginners Luck

I guess an old dog can learn a new trick because I am learning how to do a blog. Be patient with me as I create this, I hope it will be helpful and that I will have some information that will be helpful.

My goal is to get some really good recipes for us Candida sufferers as well as those who just want to eat healthy and add some helpful hints and tips (all my sisters better give me some ideas on these - please!). Remember this is just evolving so any suggestions would be helpful.

Anyway, I'm getting outside my comfort zone and attempting to do something new. Should be fun, I know.

Favorite Recipes

Foil Packet Taco Chicken
4 - 4 oz. boneless skinless chicken breasts
4 tsp taco seasoning
1/2 cup salsa - your choice of heat level
1 -2 potatoes, peeled and thinly sliced
3/4 c 2% milk Mexican shredded cheese (fat-free for Core)
1/4 cup reduced-fat sour cream (fat-free for Core)
Preheat oven to 400. Sprinkle chicken with taco seasoning. Divide potatoes over 4 large sheets of heavy foil, then top evenly with chicken salsa and cheese. Bring up foil and double fold top and both ends making a packet, but leave a little breathing room. Bake on a cookie sheet for 30-35 minutes. Let stand 5 minutes before serving.
Makes 4 servings @ 6-Points or Core

Banana Muffins
2 eggs1/4 cup granulated Splenda1/4 cup brown sugar
3 Tbsp canola oil
1 1/2 cup cream of wheat
1 1/2 large banana
2 tsp baking powder
1 tsp each: salt, baking soda, cinnamon
Mix wet ingredients together well and add dry ingredients very slowly. Mix well. Spray cooking spray on muffin pan and pour mixture into pan. Bake at 375 for 16-19 minutes.
Makes 12 servings @ 2 Points each.


9-Can Chili
1 lb extra lean ground beef
1 onion, chopped
2 cans rotel tomatoes
2 can diced tomatoes w/garlic
1 can diced tomatoes
1, 8oz can tomato sauce
1 can white beans
1 can black beans
1 can pinto beans
1, 16 oz bag cole slaw mix

Brown onion and ground beef together, drain. Combine all ingredients into large pot and heat to boil.
1-Point per cup or Core

Chicken Fried Rice
4 large egg whites
1/2 cup scallions, chopped, green and white parts
2 medium garlic cloves minced
12 oz uncooked boneless, skinless chicken breast, cut into 1/2" cubes
1/2 cup carrots, diced
2 cups cooked brown rice, regular or instant, kept hot
1/2 cup frozen green peas, thawed
3 Tbsp low sodium soy sauce
Coat a large nonstick skillet with cooking spray and set pan over medium high heat. Add egg white and cook until scrambled, stirring frequently about 3-5 minutes. Remove from pan and set aside. Off heat, recoat skillet with cookin spray and place back over medium high heat. Add scallions and garlic; sauce 2 minutes. Add chicken and carrots; sauce until chicken is golden brown and cooked through about 5 minutes. Stir in reserved cooked egg whites, cooked brown rice, peas and soy sauce; cook until heated through, stirring once or twice about 1 minute.
Makes 6 servings (1 cup each) @ 3 Points each or all CORE
